What Makes Hard Truth Special: The Sweet Mash Process

Founded in 2015, Hard Truth is relatively new to the whiskey scene, but they’ve made waves with their commitment to crafting exceptional spirits through the sweet mash process. Unlike the more common sour mash method, where remnants of previous batches are used to start the fermentation process, sweet mash uses a fresh mash for each batch. This approach allows for a cleaner, brighter profile and gives the whiskey a unique depth and complexity​.

It’s a time-consuming process that requires meticulous attention to detail, but it results in a spirit with vibrant and layered flavors.

• Double Oaked Sweet Mash Rye: A luxurious take on their sweet mash rye, this whiskey is aged in new charred oak barrels and then finished in a second set, adding rich layers of caramel, oak, and spice​.

Our Experience at Hard Truth

Our journey to Hard Truth began in August, and from the moment we arrived, we felt the passion that goes into every bottle. Walking through the distillery, we saw firsthand the care and precision behind their sweet mash process. The highlight of the trip? Working closely with Bryan Smith as we tasted through a range of their best barrels, each one offering a different expression of what makes Hard Truth so special.

After much deliberation, we selected a Toasted Single Barrel Rye that blew us away with its balanced sweetness and subtle toasted notes. The collaboration allowed us to bring a unique whiskey to our customers, something that truly embodies the spirit of craft distilling.
