Hillrock Estate Distillery, led by Jeffrey Baker and the late Master Distiller David Pickerell, is known for its commitment to quality and tradition. The Pooles Hill 2017 Harvest is a testament to their dedication. This single malt is made from barley grown on the estate, which is then meticulously floor-malted and smoked in-house. The whiskey is aged in specially selected barrels that contribute to its rich and nuanced flavor profile, making it a truly unique offering. 

This whiskey is produced from estate-grown barley, which is traditionally floor-malted and smoked using imported peat from Scotland. The barley is then small-batch distilled and aged in a combination of charred American Oak, ex-Bourbon, and Sherry casks, which impart a rich depth of flavor.
